I’ve not had the best of news this week. I won’t say what it is, but its not good.

Funny thing though, when bad things happen my mind tends to get creative. I’m now thinking about making an imperial coconut stout as my next batch of beer.







I toyed with the idea of a brown coconut ale, but something kept saying imperial style, and so I’ve decided to go with my gut, and make it.

This will be the third beer I’ve used coconut in, and I love using it. Its just so challenging to get the flavors right, and the right amount of toasting as well.

Part of the joy of making beer for me is not making something I know how to, but making something I could royally mess up. This could be one of those times. I have no idea if the alcohol might over power the flavor of the coconut, or if I use too much, or too little coconut how that will make the beer taste.

This should be a fun one to make. Yes, Norm you’ll get a bottle.
